A whole chicken gives the cook the full bird to work with. Roast or smoke it intact, break it down into parts, and save the carcass for stock. Choose the size that suits the meal, from 2–3 pounds through 7–8 pounds.

Tyner Pond Farm raises these chickens in Greenfield, Indiana. After their brooder period, they live in open-sided mobile shelters moved daily across pasture. They receive a non-GMO ration along with pasture forage and are raised without antibiotics or vaccines.

Each bird is vacuum-sealed and frozen. Giblets are not included unless the package label says otherwise. Thaw in the refrigerator before cooking.
