Why Indiana grows the best grassfed beef in the country.

Most arguments about grassfed beef start with the cow. We start with the dirt — and the climate above it. Central Indiana is one of the most productive places in the country to grow cool-season pasture grass.

If you've ever read a story about grassfed beef, it usually starts with a cattle breed, a celebrity rancher, or a pretty pasture. Useful, but it skips the part of the story that explains most of the outcome: the place. The grass any farm grows is mostly a function of climate and soil. The beef any farm produces is mostly a function of the grass. So the geography of where the farm sits explains more about the meat than almost anything else — and the geography of central Indiana, where we farm, is genuinely unusual.

Most regenerative grassfed operations in the United States are out west — Montana, Wyoming, the Dakotas, parts of California. They get the marketing budget, the magazine stories, and the cowboy aesthetics. They also fight enormous climate disadvantages: short growing seasons, heavy summer drought, and soil that hasn't recovered from a century of plowing. Indiana is on the opposite end of that spectrum, and it's a quietly enormous advantage.

01 · The geography head startThree things have to line up.

To grow nutrient-dense forage on pasture, three things have to line up: a long enough cool-season growing window, soil that holds water and cycles nutrients, and rainfall that arrives steadily across the season. Most regions in the country have one or two of those. Central Indiana has all three.

These aren't dramatic numbers, taken individually. But put together, on a farm that's been managed for soil health for two generations, they compound. The pasture grows faster, longer, and denser than what you'd see on commodity ground in the same county — never mind on a depleted Western range.

02 · Cool seasonA longer window for the grass cows actually want.

Cool-season grasses — orchard, fescue, ryegrass, plus the legumes like clover and chicory we interseed with them — are the species that produce the most nutrient-dense forage in the country. They thrive in temperatures between roughly 50 and 75°F. Central Indiana sits in a climate band where those temperatures last longer than in most of the country: more weeks of active grass growth on both ends of the year.

What you see on the ground is simple. Our pasture comes alive earlier in spring than it would for someone farming in northern Wisconsin or the Plains. It stays productive deeper into fall than it would in Tennessee or Kentucky. And in summer — when high-plains pasture goes dormant and ranchers haul in feed — ours keeps growing.

03 · The soilFour percent organic matter is a number you should know.

Soil organic matter — the percentage of decayed plant and animal material in the dirt — is the single best proxy for how productive a piece of land actually is. Commodity row-crop soil in the Midwest typically runs 1.5–2.5%. Long-managed regenerative pasture can build past 4%. Our soil is over 4%.

That difference matters in three ways. First, water: every 1% of additional organic matter increases the soil's water-holding capacity by roughly 20,000 gallons per acre. On 800+ acres, that's tens of millions of gallons of additional water held in the ground, available to the grass during dry spells. Second, nutrients: microbial life in high-OM soil cycles minerals into the forage continuously, instead of the farm having to truck them in. Third, resilience: when a heat wave or a downpour hits, soil with structure absorbs it. Soil without runs off or bakes.

04 · The rainIt rains here. It keeps raining here.

Most of the U.S. grassfed industry happens in places that have to fight their climate. The northern Plains get most of their precipitation in a tight window and then nothing for months. California's grass-finishing operations now plan around drought as the default state. Even Texas and Oklahoma — the heart of commodity beef — see pastures go brown by July most years.

Central Indiana gets roughly 42 inches of rainfall a year, and — more importantly — it arrives steadily. We get rain in May, June, July, August, September. Pasture never goes dormant from drought. Cows never get pulled off grass and finished on grain because the grass ran out. There's no asterisk on "grassfed and grass-finished" when you can actually count on the grass.

05 · The mathWhat it adds up to in the meat.

Take all three together: a longer cool-season window, 4%+ OM soil, and reliable rainfall. The pasture grows densely, all season, with deep root systems. The cattle eat that pasture, and they eat it constantly on a multi-daily rotation that keeps them on the youngest, most nutrient-dense forage. The meat reflects all of it. More micronutrients. More healthy fats. Better marbling than people expect from grassfed. A flavor profile that's actually different from the same breed raised in a different geography.

This is the part most marketing pages skip. "Grassfed" is a process claim. It tells you what the animal ate. It doesn't tell you what the grass was made of, and grass made of Indiana soil is not the same as grass made of high-plains soil.

Grassfed is a process claim. What the grass was made of is the real claim — and that comes from the dirt.

06 · Why this matters if you're a customer.

If you're buying meat online, you're usually a long way from the farm. You can't visit. You can't watch the herd move. You can rely on the brand to tell you what they want you to know. The geography question is one thing the brand can't fake. The climate is the climate. The soil tests are the soil tests. The rainfall maps are public.

So when you're trying to figure out whether a grassfed source is for real, look past the photographs of cows in tall grass and ask the boring question: where is this farm, and is that a place that's actually built for what they're selling? For us, the answer happens to be yes. Indiana is, quietly, one of the best places in the country to grow grassfed beef. That's the head start that lets the rest of what we do — the multi-daily rotation, the AGA certification, the family — actually compound into a better product.
